You will need:
Maui Sunset Sauce, Fillets of Snapper or other white fish (see suggestions below), Lemon juice, eggs, flaked coconut, salt, pepper, butter, mint leaves for garnish.
Preheat oven to 450˚
On stove top, bring, Maui Sunset Sauce to medium heat. Stirring frequently.
To prepare snapper (or other white fish such as Grouper, Catfish, Talapia, Amberjack, etc.) set up two (2) prep. bowls, rectangular in shape if possible, pour 2 eggs into first bowl (whip to form egg wash), pour 1 1/2 cup coconut flakes into second bowl. Set aside.
Season fish with salt, pepper and a few squirts of lemon juice (concentrated or fresh).
In oven-proof skillet, bring 3 TBS butter to low-to-medium heat. Dredge seasoned fish fillets in egg wash, then coconut flakes.
Place coated fillets into heated butter. Saute' in the butter for 1 1/2 minute on each side. Transfer skillet to oven, bake at 450˚ for 12 minutes or until fish is flaky at thickess portion.
Drizzle Maui Sunset Sauce generously over fish.
Serve over Angel Hair Pasta or Jasmine Rice. Garnish with fresh mint leaves.
